The 2008 “Bird in Hand” Cabernet has been aged for over 18 months using new and old tight grained French oak. IAn elegant varietal Cabernet displaying aromas of blackberries, blackcurrant and subtle oak fragrance from fine grained French barrels. The palate shows tremendous amplitude, gentle tannins and intense ripe dark fruit expression. Will age gracefully.

The Clare Valley is perfectly suited to the production of world class Riesling.  The hand-picked fruit is sourced from some of the highest altitude vineyards in the district.  The berries are harvested earlier to retain a higher natural acidity and then whole bunch pressed to extract only the purest juice. Honeysuckle Riesling is extremely limited and made in a slightly sweeter style by stopping the fermentation early.  A long cool ferment retains the sweet floral aromas and delicate lime & mineral flavours. This wine is made in a style that is best consumed while young, fresh and vibrant.  With bright acidity and low alcohol, it is a great wine to pair with spicy food.

Bird in Hand Merlot 2007 is a limited release wine aged in a mix of new and old French oak. It is deep in colour and exhibits intense aromas of plum, mulberry, cinnamon and spice. The complex, well structured palate offers silky tannins, succulent fruit and a supple texture. Fleshy plum is most apparent on the palate amongst a complex mix of flavours. The richness and vibrancy of the fruit ensures a long and persistent finish from this balanced and elegant wine. Cellaring will reward.

We created only 3300 individually numbered bottles as we wanted to give our focus to top notch quality wines. Bird in Hand Nest Egg Shiraz 2007

The 2007 growing season consisted of spring frosts, dry warm periods and a few rain events culminating in low yields. The Shiraz grapes ripened slowly and evenly resulting in rich colour, spice filled flavours and great length and intensity. The wine was pressed off into a mix of French and American oak for an 18 month maturation and it ended up being a vibrant dark red wine with varietal aromas of spice, plum and white pepper. The palate reflects the aromas and is enhanced by fine spicy tannins typical of cool climate Shiraz. Cellaring for 5-10 years will not disappoint.

2007 in the Adelaide Hills was characterised by significantly lower yields, we anticipate this to be well expressed in the bottle. Warm autumn days and cool nights enabled our Pinots' development of flavour and ripeness along with crisp acidity and aromatics. This splendid hand picked Pinot Noir from our Woodside vineyard was whole bunch pressed and processed following the meticulous" Methode champenoise", bottle fermentation and 18 months on yeast lees. This wine shows distinctive Champagne flavours, fresh bread, brioche and a creamy texture with outstanding depth and finesse with will surely do wonders with your salmons, camenberts and bries.

Handpicked fruit was whole bunch pressed before undergoing a long, cool fermentation to capture the purity and integrity of the estate grown fruit and to capture the abundant lime, citrus and honeysuckle aromas. The palate mirrors the aromas and provides bright, crisp acidity typical in Clare, ensuring length and structure.  An elegant and lively wine that cans either be appreciated young or carefully cellared.
