Citrus fruit with a combination of fleshy stone fruit and an obvious use of classy French Oak. Fresh lemon and lime zesty mouthfeel transitions into layers of complexity including subtle lees stiring. This is complimented by French Oak adding balance to the structure and texture but with minimal impact on aroma and flavour, characterising the Forester Estate elegant style.

A slightly more serious style showing clean and focused characters of citrus, nettles, dried herbs and flint, with a touch of smoke adding complexity from partial barrel fermentation in one year old oak barriques. A fuller style that has great texture and freshness with dried herbs and citrus at the forefront. The wine finishes long and clean with lingering herbaceous characters and mineral acidity.

Fruit sourced to make the Yelverton is grown with absolute attention to detail. Identification of soil boundaries within blocks is the first step in selecting potentially superior fruit. A fine, long open Cabernet palate with no clutter or distraction. Wonderfully integrated French oak with a restrained tannin presence frames a savoury almost spicy Cabernet.

The wine has lifted aromas of blackcurrants and spicy aniseed. It has a regional brooding earthiness and a dark mint character that draws a second look.
