Cabernet Merlot is a blend of the merlot and cabernet Sauvignon varieties. It combines the soft, smooth richness of the merlot grape with that of the stronger, more robust cabernet sauvignon variety.
The Merlot grape is sweeter, smoother, and lower in tannins. This means it blends well with other grapes and is ready to drink at a younger age.

The 2006 Cahillton Yarra Valley Cabernet Sauvignon Merlot is deep ruby in colour, with a complex bouquet of varietal fruit characters including blackcurrant and blackberry. The palate displays intense fruit flavours of cassis and black fruit, supported by French oak, with firm tannins and a lingering aftertaste.
Serve with strongly flavoured foods such as roast lamb or other red meats, a range of cheeses, or try a dark chocolate with high cocoa content.

The wine’s colour is deep red with a purple edge. On the nose flavours of mulberries, mint and spice combine with well integrated oak. The palate is full with firm fine tannins that linger while finishing with flavours of ripe berries and cedar.

Rich and complex, showing good concentration with sweet earth, currants, blueberries and red berries. The cedar oak is well balanced and integrated. There is a lifted perfumed character reminiscent of potpourri along with classic Margaret River dusty/leafiness.
The palate is full with a fleshy texture provided by Merlot along with a fine grain tannin firmness provided by the Cabernet. Sweet berries and currants dominate with more complex notes of dusty earth, leaf and cedar oak. The wine finishes firm with lingering currant and red berries.

Showing a mix of red, black and blue fruits with a background of savoury cedar oak and lifted florals. There are more complex characters of dusty earth, bay leaf, chocolate and aniseed.
