Barbera is an amazing variety that offers great natural fruit balance combined with soft textured tannins. Due to these traits this wine is aged gently in large old oak vats. The leisurely maturation softens and enhances the flavours of this wine. The natural acidity and intense colour of this grape variety is intensified by the vineyard location. Our Barbera is planted at the very top of Chalk Hill in shallow ironstone sand. This location allows for the production of small berries with great depth of flavour and velvety tannins.

A playful blend of Cabernet Franc, Merlot and Cabernet Sauvignon. Cabernet Franc is a perfumed and aromatic variety which is known for its firm tannins. We try and achieve a balance between its wonderful perfume, the burst of fruit on the front palate and its fine tannic structure. The Merlot gives mid palate weight, and the Cabernet adds to the exceptional length.

This wine comprises fruit from both Watervale (45%) and Clare (55%) vineyards, harvested approximately 3 weeks apart in March. The earlier Watervale parcel contributes wonderful apple and sherbet along with a mineral dryness, while the slightly riper Clare component provides lemon zest and lime fruit characters.

Claymore "Whole Lotta Love" Rose 2011

We found that our Grenache held its acid well in the 2010 season, allowing for slightly later picking and more generous fruit profile. Cold soaking for 48 hours is sufficient for colour extraction and the wine is treated to a long, slow, cool fermentation to retain maximum primary fruit freshness.
